Unfortunately, it’s simple only if the course access has not already expired by updating this date:
If course access has expired, then we do use Registration codes - I know you are looking for something else. I have also been told this can be done via API using the “Update User Access Expirations”, but we haven’t been able to work through that yet, so we continue to do it manually :)

There are a few ways we use but they are a bit clunky - at an individual level an admin can add content via the access tab of a user profile
scaling up from that you can do a bulk import into the system and assign users specific content at the end of the upload steps
Unfortunately there isnt a way to select a list of users already in the platform and assign content to them in bulk. Beyond that there is the API which can process enrollments but that is done outside of the platform by someone who is comfortable using them.
If you’re asking how to extend access for only 1 learner in a course without also extending the access period for the other enrolled learners… so far we have not found a way to do this. But it’s something we’d be interested in doing if it became possible. If you submitted a feature request, I’d upvote it!
