I’d love to see a report that shows me how each course is rated. I’m beginning to think that the ratings at the end of each course aren’t actually attached to the course.

Hi Korey - have you looked at the testimonial log? It might have what you are looking for.
This can be accessed at the main site level via reporting hub > library - under the learner actions section.
